If you do manage to grow 100 lbs of potatoes the good news is they store really well in a cool damp environment. I don't have very cold winters and have stored root vegetables in a cooler filled with dirt/sawdust successfully. The closer you can get the storage environment to cold but not frozen dirt the better they will store. I have stored potatoes for 2 years then planted them to grow more. They just have to stay cold all summer or they will sprout.
Also consider using your HVAC systems condensation line to provide them water. Add some sunflowers and you're on the way to a self sustaining chicken factory.
